The ageing is the decisive stage in the final quality of the wine.
The importance and quality in the building of our cellars enable
the storage and the ageing of more than 2 million bottles,
in many vintages (from 1988 to 2000).
Many of our wines stay several months in new barrels made of oak cask-wood.
Our cellars shelter more than 2000 barrels whose origin is highly controlled.
We select our uncut oak in the French South-West forests for an important
part of our barrels. We age our cask-wood oak and have them dry, then our
barrels are built in respect of our requirements by the Millet’s Cooper’s Shop in Galgon.
Thus, the wood endows the wine with all its aromas (vanilla, grilled…)
that reappear at the time of the wine tasting, making of it a great quality wine.
